OK, I did the voltages! One side of the circuit reads dead on, but the other side has generally higher voltages than in the manual. These are - I hope - still ok:
2 - 106 (supposed to be 70-90)
7 - 100 (supposed to be 70-90)
13 - 106 (supposed to be 70-90)
14 - 106 (supposed to be 70-90)
15 - 127 (supposed to be 70-90)
and there are some errors with 44, 45, 47 (some of whose resistances were mismarked in my manual)
44 - 76.7 (supposed to be 180)
45 - 76.7 (supposed to be 0)
47 - 175 (supposed to be 0)
am I good to play my very first record, ever? :) Thanks to all for their advice - it is so nice to know I can get feedback on this!

I swapped the tubes, and the high voltages followed them. So I took a whirl and played a record - sounded great! I think I'll just buy some better matched tubes and go from there. As always, thanks to all who have helped with this build and for everyone who has worked to make these spectacular products...now on to custom cables, then the integration!

I would let the tubes run in for a few days and recheck those voltages. You'll likely find that they all settle down.
