What brand of headphones do I need to listen to the output of a Steomour 11 amp? Do i have to change from the stero plug on the headphones to phono jacks? I am building the kit right now and I have it set for 8 ohm output.

Yes, you definitely need to get the amp up and running without it first.
With no DC supply, you will want to look for power hungry headphones, maybe something like a big planar headphone that will eat up the available power from the Stereomour and not reveal the lack of a DC supply.
I would stay away from IEMs, Grados, and other really sensitive headphones with a stock Stereomour.

what about the headphone jack/ do i have to make new jacks ie two phono plugs from one jack stereo plug?

You can get a 1/4" female TRS plug and some banana plugs to make a short adapter cable.
I used to be able to just find these for sale, but there don't appear to be any available at the moment.

You can make or buy an adapter from banana plugs to whatever type of plugs your headphone cable has.
I've been listening to my Stereomour II's and my Kaiju this way with my LCD-4s. See my signature line. I use a banana-to-4pin adapter.
Sounds amazing. W/o the DCF upgrade, I heard some hum. With the upgrade: silence.

I bought one from this company a couple years ago on sale (prices have gone up). Well made. Looks nice. Still use it.
