Title: Which RCA type of cable for S.E.X.?

Hello - I've been looking to build my own cables so they can be perfect in length. While looking up how to do it I've noticed that there is Single Ended and Differential Input. I'm guessing I need to find Single Ended wires since it's a SEX amp but just wanted to double check with you guys. Thanks!

Yes, you are correct.  You want single ended cables.

Dumb question #2: Does this mean my DAC must be single ended too or does that not make any sense?

Your DAC needs to have RCA jacks as output jacks, not XLR jacks.  (Unblanaced output vs. balanced output)
