Generally the top plate is not used as a heatsink for a tube, as the heat transfer is pretty inefficient, and the average plate isn't a great heatsink anyway.
To combat microphonics at the socket, most folks use constrained layer damping, which could be done at the interface of the wood and the metal plate, though it would be easier to do it at the socket-to-plate junction.
