If I chose the 470 uF Aerovox, would the final film cap need to have an equivalent value (ie 470 uF)
Will a higher value have a positive effect on the sound?
What is the function of these capacitors? To filter out noise?

The use of 470uF caps in the first position will not necessitate a different capacitor in the 3rd position.
The higher value will sound different, but we can't predict how, especially since you're planning to use a different brand of part. I'd suggest building the amplifier stock first, then changing out each cap. This will give you the chance to hear the impact of the alterations you're making.
These capacitors serve as a very low impedance path to ground for the noise generated by the power supply. A bigger value of capacitor will present an even lower impedance, so going to 470uF will work well, going down to 100uF might not be the greatest idea.
