What is the transformer heater current rating of the 6.3v winding?
Could I use a 6336 tube (6.3v @ 5A) instead of a 5998 or 6080 (6.3v @ 2.5A)?

The Crack transformer won't support this, but the C2A transformer will... (you'd have to dump the 6AQ5 voltage regulators in the process and design a whole new amp, so YMMV)

or you could just buy a 6.3 volt 5 amp transformer and stick it on somewhere
they are small and cheap
