Completed EROS build and after a few issues, sounds great.
I had ordered Sowter 1090, per recommendation, but did not receive ones with a mounting nipple. Re-ordrered correct ones. Just for kicks I hooked up turntable with my new Dennon DL-103 cart with .3v output. Power amp is Black Ice F 22 using EL 34s. 60 watts per channel at 8ohms.
Sounds great, and I'm getting -70 db at 80% turn on volume control at my normal listening spot/
Do I really need the SUTs?

If you have your setup going and lift the needle off the record, you may notice some tube rush and hiss that would be quite a bit higher without step-up transformers.

The position of your volume control tells us absolutely nothing about how much power your system is delivering.  Your amp has 27dB of gain, which is a lot, but even assessing the impact of too much gain would require knowing how sensitive your speakers are, how loudly you listen, how large your room is, and to some degree what you like to listen to.

Ok then
Speakers are Klipsch ST-1 relatively inefficient.
Room is 15 x15 10 .Curtains on one side. Wall hangings all over.
Listening to Jazz, classical rock and now classical.
Sometimes I like it real loud.

You'll be buying lower noise floor with the step-up transformers.  If the amount of tube rush you're hearing doesn't bother you, then the juice may not be worth the squeeze.  From what I remember back when the Eros 1 was pretty new, we weren't always happy with the results of the Eros circuit with a 2.5mV HOMC cartridge.

Thank you for responding.  I've been listening for the last four hours. DL103 cart is still in break in. And the sound is very enjoyable
Maybe a dumb assumption , I'm thinking that the SUTs will give me more volume?
