I completed the kit, but when I plugged in headphones, I had this result. As the jack is being inserted, I hear both channels faintly, but when the jack snaps into its final position, the left channel gets loud and clear, but the right channel drops out totally.  If I jiggle the jack out a bit, I get both channels again, but they don't sound great.

I tried 2 sources and phones, so it's the amp.

Also, I admit that not all the voltage tests passed, as some jumped around so much that they got the correct but also several incorrect readings.

Does this sound like a jack problem, or a larger right side issue? Where to start...

I would start by reporting any voltages that are off (say something like "at terminal number 89 I have 100V and there should be 80V", then we can have an idea about what's going on, also consider posting some build photos. 

Never, ever use an amp that doesn't pass its voltage checks.  This can cause damage to your headphones and voltages that are way off already tell us that your amp isn't working properly.

I would suggest careful visual inspection of your solder joints too. "Voltages jumped around" could be from an intermittent wire connection where soldering was missed.
