Is anyone aware of any off the shelf transformers that have 2.5 volt windings? TIA

Edcor and Magnequest are the two that come to mind most quickly.
Since 2.5V tubes are relatively uncommon, it is often more practical to just add a dedicated 110:2.5V transformer where needed.

Some transformers have a 5V winding with a center tap...John

Antique Electronics carries a few Hammonds, some meant specifically for 2A3 and 300B amps, others meant for old radios that used 56s, 2A3s, etc.
