They are described in detail in the manual on pages 34-36, assuming you have the current manual (Version 1.1).
For the PC-2, the short black wire goes to the 300B plate, the longer red wire to the high voltage supply.
For the OT-1, the short twisted pair is the secondary, red positive. The long twisted pair (transformer terminals 5-10) is the primary, black to AC ground (the 300B cathode in the Paramount) and red to the parafeed cap.
Since these items are not sold separately, there are no other instructions than those in the manual.
