I warned ya!

An old fav, eggs fried in bacon fat.  Ma used to to do them sunnyside basted.  She would spoon the hot bacon fat over the eggs cooking the tops.  Hella good, but hardens your arteries just thinking about it eh?

Well I deceided that I wanted the same flavor but hold the heart attack.  I used to work in resterants for summer jobs when I was a kid and I learned that cooks do not turn eggs, they flip 'em.  Done properly it's fast and better then a spatula for avoiding the dreaded yolk breakage.  I leaned the flip.  Yeah, a lotta eggs went down the sink, but hey eggs are $3 a dozen and education costs money.  I got good at it.

So, 3 slices of bacon cut in half cooked up in the egg pan, drain off most of the grease and crack the eggs in the hot pan.  When the white is almost set (just a little clear left) do the flip and wait 15 seconds.  Voila'

Alton Brown style, over easy.  As Alton says;  "You can get sick from eating eggs prepared like this but it's worth it"

Hella good - :)  All the flavor, but not swimming in grease.  I don't eat this every day, once a week at most.

Turkey bacon is not a bad substitute either and healthier.

My Sunday breakfast had more of a Southwest twist. Two eggs over easy, Carne Adovada, grilled onions, pan fried potatoes, a scoop of pinto beans with green chile piled on two blue corn tortillas and a cup of strong coffee.   ;D

I love Sunday breakfast. I say the hell with it and make whatever I want, Today it was a Dutch Omelet. one egg and 2 whites, with fried potato, onion, bell pepper and bacon roiled in, topped with cheese and an English muffin and Picante sauce on the side. Yum.

I love these off topic post, for the sense of community but I wonder if they might best belong in Grainger's  corner. What does everyone think?...John

Sometimes I make hash browns.  Ya need something to sop the yolk in, but 1 starchy is enough for me.

I plan to make lots of "off topic" posts from now on.  This is the only forum I have ever seen that didn't have a "lounge".

The boss said this is the place for them.  I really wondered, 'cause I looked and even here it's all about audio or audio related stuff.

Hey, I love audio, but there is more to life than sound.

Yeah, that Irish breakfast tea is good stuff, lots of flavor.

Made the mistake of having some late one night, didn't sleep too good.  That stuff is strong!

Oh yeah, there is nothing like a "full Irish" breakfast. I wish I could get rashers, black and white pudding and Irish link sausage in the grocery store here in New Mexico. Actually there is one place called, "Two Fools Tavern" that serves a full Irish breakfast. I usually wind up furnishing it off with a pint of Guinness. Good Craic! Brilliant!

Everything sounds wonderful EXCEPT you black pudding people...yeeaaaccckkk.. But whatever puts hair on your chest Deb... :)  When I was a teenager, everyday for couple years I would have 6 eggs and a bunch of cheddar thrown in for good measure... MAN! egg and cheese is an unbeatable combo.. I have since changed, now, I have 7 egg whites and spinach thrown in for good measure daily... Yeah, I know, NOT the same, but gotta do it, ok, off to the gym now.......... and RIP Don James, thank you for everything....

Just gott'a say there is nothing bad about Eggs and Bacon.  Many good things about them.  The carbs on the side I would have to do without (diabetic).  But there isn't anything in my arteries but blood.  They looked.

I have ordered rashers online and they were excellent!  You can also order white and black pudding online, but it's not gluten free so I can't eat it.  One of the nice things about Ireland is that it is easy to eat gluten free there, aside from the fact it is a wonderful place!
