I'm want to upgrade my MacBook Air from Yosemite to El Capitan.
11" Mid 2011
1.6 GHz i5
4GB memory
S/N C02GV9NADJYD

Should I get the DAC flashed first or see if it works without the flash? From what I've read on here the need for a flash is related to USB3 on newer machines. Is that correct?

Don't do it.

Your DAC works. If it works, keep it working.

That's kinda harsh, but OK I'll keep it how it is.
At some point I'll have to get a new computer. What happens then?

As we have no control over the computer hardware or software it's not possible for us to say what will happen. In our experience the most assured approach is to dedicate a computer that is known to work well, like a pre 2011 Mac with Yosemite or older OS, to function as your music server. That's not to say that future setups won't work, just that we can't really know if they will or not.
