STP vs Cat5

I've noticed a progression from STP to Cat5 for input and output wiring in recent Bottlehead products. I'm curious as to why. Does it have to do with one wire sounding better than another? Ease of use? Something else?

The CAT5 sounds a bit better, is a bit easier to work with, and takes up quite a bit less space under the chassis plate. When you look at the fat bundle of STP cable runs on a Stereomour 1 vs. the CAT5 on Stereomour 2, the space savings becomes apparent.
