Is there a way and/or product to record onto tape bypassing the deck internal electronics?
This would involve at minimum, line in to recorder with the program material, bypass internal amp and eq, use ext "XXX" amp and eq, then connect back to record head.
"XXX" amp would set the record level so that would have to be calibrated and displayed accurately on the recorder meters.

You need what is called a record amplifier. It is more complex than you describe in that there must be a bias oscillator as well as an amp. We don't make one - yet.
